I have a question only someone with serious experience in food service could answer?

There is a restaurant next to ours and they have a serious mouse problem.

Lately, the mice have been making their way into our clean restaurant and leaving droppings by the door that separates our restaurants.

If a health inspector sees this, our restaurant could face serious consequences despite these mice not being from inside our restaurant.

What can we do to solve this problem?

I’ve only ever dealt with a mouse problem coming from within my own store, which was solved by deep-cleaning…. but I can not math out how to solve this when the source is beyond my reach.

Your people better take that very seriously that’s a huge problem. You Need to eliminate that problem. Here in Miami the health inspectors will shut you down until you can show proof that everything is good again and that you passed the inspection. If they see roaches or rat droppings or roach droppings, that’s a problem. Here in Miami on the news every Thursday, they have a topic called dirty dining. They talk about all the different restaurants and they go there live and they film it and they show who is shut down and who his back active again.

This would be simple to solve if the problem was coming from inside our store.

I don’t know how to solve this when it’s coming from next-door.

if that restaurant has an obvious problem like this, and they still have a license... that only means one thing... they do bribe the health inspectors, there is no other explanation

or maybe you're not so monitored for permits and licenses... either way, you need to confront the owners of the other restaurant and also health inspectors because those are the ones that are not looking into this problem

Keep your place exceedingly clean. Then, have your friends eat at the other place, and have them call the health inspector a few tunes saying they saw rat shit there, that it was dirty, that they saw a rat or a roach. That sort of stuff tends to get a health inspector to show up if done enough. They'll see that place and fine them, and even if they show up to yours, they'll see your clean space and realize at best you're collateral from your neighbor.

You might drop off some mouse traps for the restaurant next door while employing some of your own in the space between your restaurants. Or you could just snitch and have the health inspector go by their place for the mouse droppings so they have to shut down and deep clean while your business goes on without any issues.

Traps with bait in them. Local exterminator can set you up. The traps go on the outside of your establishment. The mice go in there to eat instead of coming into your restaurant.

I suggest speaking to the health inspector about your neighbor so they can deal with them.
