If it was really about sex, it wouldn’t be difficult to find a new partner so they’re not dating you for just the sex and most of them have been in the position of being accused of being the other woman with a customer they had no attachment to at all. To be honest, I think (especially when it comes to strippers), that's a profession that doesn't really relate to cheating. It's frowned upon, but it's an honest profession. I think people do it to make money - that's it. Work. Nothing feels lonelier than being wanted at work and then coming home to an empty house. I think if you find a partner who's ok with that lifestyle, you surely wouldn't want to cheat on them. You'll be happy to come home to someone who values you for more than your body.
As for only fans, I think that's more nuanced, as literally anyone can have an only fans and use it privately / anonymously (as far as I'm aware). It seems a lot easier to cheat in that regard, if you don't openly share those activities with your partner.
That's my take... but I could be wrong, cause I know little about either hah.

I do not see why not, however a lot of these girls have other issues. Some have daddy issues or are just predisposed to be promiscuous. Some are drug users as well. The fact that they were strippers does not automatically disqualify them.
