Why is Medusa portrayed as a monster instead of a victim?

Medusa, despite her youthful appearance, is actually quite old (by human standards). Note that she doesn't have legs, nor has a vagina, which makes it impossible for her to get laid. Have you ever seen a woman in her 40's who can't get laid for heck of a long time that is not a bitter bitch?
As an added bonus she can turn you into a stone.

In the version of the myth I've read (Ovid), she did stuff with Poseidon in Athena's temple, and Athena caught them and changed her into a monster.

This is Greeks we are talking about. Being raped by gods was a fairly standard affair back then that people did not really bat an eye at. Besides that Medusa was originally not thought of as a fair maiden raped by Poseidon but just born as a family of monsters. It was first later that she was re-envisioned as a more tragic tale of a cursed woman for defiling Athena's temple by being raped in it. The Greeks actually considered turning Medusa into a monster so ugly that men turned to stone by looking at her as a just punishment for defiling the temple and enraging Athena.

... Medusa also hated humans and killed a whole fuckton.

Because in the old Greek myths she was always a monster--she didn't turn into a victim until the Roman poet Ovid said she was raped by Poseidon and transformed by Athena.
