I use he/him for men, and she/her for women, like a normal person, and nothing else. And yes, we all can tell the psychologist isn't very subtle trying to use female pronouns to imply Heard is the victim; it's very obvious and not as clever as the psychologist thinks it is.
Also, "fun" fact: Most domestic abuse is perpetrated by women. 40% of all reported cases, however, it's more like 60% of the unreported (but known of) cases out there, where the man did not call the police or file charges.It is mostly done by women. Female victims just get more sympathy and attention when it happens, especially since women are more fragile. People also dismiss or even mock male abuse victims, including law enforcement themselves.
But most of domestic abuse IS done by women, and almost all domestic abuse done involving blunt objects/weapons involves women.

If the victim is a male, I say "he" or "him" or "that dude." If the victim is a female, I say "she" or "her" or "that chick."
normally you'd just use "the victim" and "the abuser". unless your sentence is completely specific about for instance, how an abuser would isolate their victims, then you could bring out "they". otherwise it can be confusing for your audience to use they and refer to both parties as it.
You refer to them by their assumed pronoun unless other wise told. In general as in victims as a group of people you use they/their/them
