You can already cure aging, I don't age anymore (longterm), and the aging I did previously is reversed, it is no different than the mechanisms needed to heal a wound without it scarring (food, water, rest, avoidance of infections/toxins/etc).
If you cure your aging it will put you back to how you would look if fully developed and healthy, you don't get to "pick an age", most people would resemble their teens or early 20s, depending on when the finished developing.
AI is not helpful to this unless you use it to sequence someone's entire genome and metabolism to figure out their exact nutritional and activity needs, but even then metabolism speed and flipped genetic switches can change with diet (this is called epigenetics).
Twenty five to 30. I was at my peak at 27. I was benching over 300 pounds and could run a marathon in a little over 3 hours.
I answered a similar question yesterday but probably 30-40 because I could be mature but still not be old yet. In my 20s I've looked too young so I'd hate to stay this way forever

Probably 21. Old enough looking for most things but still with that glorious metabolism I used to have,
I was most fit, and enjoyed life, in my mid 30s, so I chose 30 to 45.
We can slow ageing but I don't believe we can ever stop it completely. It would be great to be 25 again though. Endless orgasms! You young kids don't realize how lucky you are!
