Possible to put on 2KG-3KG after one meal?

I've been cutting my weight lately, and I lost about 3KG in a week, by accident, as I wasn't eating, but I looked better so I kept my diet up and it was working. I ended up having a small breakfast, but in school the dinner was absoulutely disgusting so I never bothered, so I didn't eat until about 6:30PM, I had pancakes with lemon juice and a bit of brown sugar, I knew it wern't healthy but I was hungry, I got on the scales and put on 3KG heavier! but just after I'd eaten.

I was pretty bloated and still am, plus pancakes have a heavy carb count and sodium so it could be something to do with that? But still, 3KG!?
Possible to put on 2KG-3KG after one meal?
