How do you make low calorie quesadillas?

I'm trying to lose weight and almost everyday I eat homemade quesadillas.

I sprinkle on some sharp cheddar, red pepper, and mushrooms, on white tortillas.

is yellow sharp cheddar fattening? and is white tortilla fattening?

what are some suggestions for low calorie snacking ideas?
