Sometimes girls seem interested but very inconsistent, and it’s hard to tell if she is shy and nervous, or just playing games and toying with a guy. And it’s easy to assume a shy girl as a game player, and dismiss her. What are signs a girl is nervous and socially awkward, vs just playing games?

Depends what kind of person.
A lot of cues could mean different things.

One very common cue is that someone that plays games exaggerate what they are trying to fake in one way or the other. to little or to much.
An other is that someone that plays games doesn't make enough of cues and also gives micro ticks that is something else.
They are aslo not congruent with each other.
Mixed signals can also be an attempt do deceive.

Real nervousness is a feeling. majority of humans leaks then. gives a matching energy from their bodies that others can feel.

I don’t think people who play Games, act nervous. I may be wrong.

Keep in mind, her personality in general isn’t the same as her behavior with you.

She may be an outgoing person, but quiet with you. Even if confident in general, she can still be shy around you.

Some people are shy In general , but some are simply shy around their crush. That can cause confusion.

Also, she can be embarrassed at being shy around you. She may try to compensate and purposefully act confident , but bc she’s shy around you, slip back into shyness unintentionally. Again , confusing.

a lot of times people who are anxious will have a crutch. Like the will be on their phone but not really paying attention to it. A book or something. Nervous ticks like adjusting their hair and clothes or fighting with jewlery. a lot of girls find one person they are comfortable with or an area they are comfortable in. It is also nerves when you see her shut down or become more walked up than usual. Personality change indicates nerves a lot of times.
