When I will be 40, of course I will get along better with men of my age and if I have to get a permanent relationship he would probably have around 35-45 years old, but if my goal will not be to get anything stable but only get fun with hookups, well, I'd totally go for 25 years olds, if I can choose. So I completely understand her preference. Possible reasons are: young guys look better and are more athletic, have more hormones and sexual appetite; young guys aren't that serious, they might not throw on you all their solidified political ideas and don't care much about all those "boring" aspect of the life; young guys are more likely not married and have no kids, so they seem easier, free, with no troubles attached; some younger guys could go crazy for you even more than men of your age because they have fantasies about older ladies; some younger guys are a bit more ingenuous and have their other girls and stories on their sides, so they won't probably obsess her to have a long term relationship with them; some younger guys are funnier, simplier, cheerful.
And I completely understand also her missing desire to get married or anything permanent, I am better off alone as well and the thought of getting someone -living- with me everyday and that I can't really push away easily to get my independency back whenever I want, freaks me out and makes me feel suffocated, even if I am in an age that should drive me to imagine myself settling down.
Another scenario is: perhaps she is a prostitute and gets money in that way. If you wonder how young guys could choose a 40yo prostitute, well... Many, many, many younger guys have sexual fantasies about older women. Many. A lot.
Said that, what about all those 40 years old men looking for 20 years old girls online, or paying young prostitutes anyway? Same thing. And their reasons to pursue younger girls are pretty similar to the possible ones I listed here for older ladies. ;)
