There's still a few of us left in the office today, and I feel abit left out and disheartened.

Not necessarily. Bosses often have a different view of why they pick the employees they pick.
Why do certain employees get picked?
There's countless reasons. Just a few that come to my mind based on the tiny amount of information you gave us is that the bosses might want those employees to work at the new shop. Or those employees have skills or job roles that relate to the opening of the new shop. Or the bosses want them to have eyes on the new shop in order to do their roles better. Or those employees handle accounts related to the new shop. Or the bosses are taking one group now and another group another time. Or any of many, many, many other reasons. These are guesses on my part because you asked but all valid possibilities.
I do the administration for the new shop.
I did hand my notice in a month ago, but they wanted me to stay so I did. I think this is a reprocussion for it.
As in why I wasn't picked to go.

What do you mean by a mistake?
They could pick the wrong person.
