Should I wait for a job if the interviewer told me the lady that was supposed to train me has broken her leg so I will have to wait for a month or so?

Have a candid conversation with her. Maybe find an agreement when you just got to know the family by hanging around. Negotiate a percentage of your pay that is fair because you took the position with the income stream of $xyz in order to stay available for them at the same marketprice minus say 25%-40&. If they pay you out of petty cash and keep you off the payroll they get to avoid the accounting hassle & payroll taxes for maybe 3 months. If it is for a contract position. One in which you are paid by a 3rd party have no taxes with held.
Also, I read accompanying letter and do not like the tone in which is was written. It sounds like they are allowing themselves of kicking the can down the road with you and could easily repeat the excuse making everything they say unreliable. If you want to respond here or send DM I'll try to be as specific as I can once I know more. Keep your eyes open.
Yes, wait. And also look quietly for a job but this one will likely be faster to get in as the other can take a while since you have to go through a whole process. If it is a big job, ask for an offer letter with a start date. It isn’t binding but it helps-s though don’t push it if you think they will say no.
If the opportunity aligns with your career goals and the wait won't create undue financial strain, it may be worth considering. However, communicate with the employer about interim plans. Seek clarity on whether waiting guarantees the role and consider other options meanwhile. This demonstrates your interest while protecting your interests.

If you really want the job its probably worth the wait... but you can always be on the lookout for something better no matter what.
Yes I’m really interested
Yeah to go through the interview process again would kill me haha especially when most places have 2 rounds of interviews

I would explore other opportunities in case this one falls through.
