How exactly should I plan on quitting my current job?

Hey, so I worked at a Kroger where I live for 16 years, and I recently completed an online course to become an insurance claim adjuster. I won't get my certificate until my class is fully paid off, but there is a plan for that. It's a very long story of why I want to quit Kroger, so I won't mention that here.

Anyway, my question is how exactly should I handle this? My mom believes I should take a leave of abcense from Kroger after getting the new job so that way, I have that job to fall back on in case the new job doesn't like me or I don't like it. She says I should say it's for personal reasons.

I get where she's coming from, but I don't trust my current store manager. I feel she's a very dishonest lady and has lied to me in the past. But I do agree that just quitting Kroger immediately may not be the best idea. Any suggestions?
