Not at all. When people offer you coffee, there is no expectation that you accept it. It's polite to offer a guest something to drink, but it's not impolite to turn it down.
People offer me coffee, alcohol, food, and full meals all the time. I turn it down probably half the time. I have a neighbor who commonly prepares full meals and even has a place set for me at the table before asking if I want to eat. Sometimes I just ate and am completely full. I turn them down and feel bad about it, but they should have given me more notice.
It is not rude, simply say... I'd Prefer a glass of water, coffee upsets my stomach... They are just offering you a beverage, so ask for something else... they will feel good for giving you what you want, and you will feel good for not turning them Down and being rude
A simple "I'm good right now. Thank you so much though."
Also, you could tell them coffee doesn't agree with you, so you try to avoid it.
Either of those aren't at all rude.
What about food?
Not rude at all. My husband doesn’t drink coffee and rejects it on a seemingly weekly basis. Nothing to be ashamed of

Of course not. Most people understand that there ARE people who don't drink ☕. I don't care for it all, and have politely declined more cups of coffee than I can imagine and never had anyone give me a hard time.
I drink coffee but not too late in the day. I often turn it down if someone offers it to me. That, or I'll ask if they have decaf. I don't think it is impolite. Most people realize that not everyone wants coffee all the time.
there are proper ways to kindly decline the gesture of someone offering you coffee... and there are rude ways to go about

Not at all. Just say “Thank, but coffee doesn’t agree with me.” A polite host will offer you something else. Most people keep both coffee and tea on hand.
Only if you're rude in your rejection. Nothing wrong with asking for some water or tea instead
hell no i dont do coffee so no its not rude just say no thanks but i would not mind a tea or water etc be nice you dont have to do things you dont normally do right.
