Every culture bastardizes other cultures food. It is not an American thing, in asia and other parts of the world they recreate "american" cuisine and advertise it as specifically western or American.
I wouldn't put it as "bastardizing". We are a nation of imigrants. A melting pot of the world. Food choices from other countries are coming here and people change this over time. So changed, yes.
Mexican food? no. Asian food? Yes. Although you say "americans" and in most cases it's actually immigrants who open up the restaurants so it's really not Americans who are bastardizing the food.

Nah they usually adapt them to American regional tastes just like they do everywhere else in the world.
I don't like the taste of the food from Mexican restaurants here. Now Taco Bell, mmm that's some good food. :)
