What food have you never eaten but would really like to try?

I always wanted to try the russian caviar but never had the chance, it's so famous for a reason.
In Sweden we have few kinds and didn't taste that special then one of my chef teachers explained that the russian caviar tastes different, so one day am gonna try it.
