Always. I love it, especially when they are a bit crispy. I usually rub the skin with butter or olive oil and salt before I bake the potatoes.

Of course. If you eat the skins (and can handle something like fourteen pounds of them a day), you gan literally live on nothing but potatoes and water. They have everything you need.
