The original dish, is a sauce originating in Genoa, the capital city of Liguria, Italy. It traditionally consists of crushed garlic, European pine nuts, coarse salt, basil leaves, and hard cheese such as Parmigiano-Reggiano (also known as Parmesan cheese) or Pecorino Sardo (cheese made from sheep's milk), all blended with olive oil. It has a mild herby flavor with hints of garlic and lemon juice.
Love it. Often use miso instead of cheese because one of my friends is vegan. Tastes the same. And when pine nuts are not available walnuts seem to work well. Just always have to have fresh basil, fresh garlic, and extra virgin olive oil.

What do you mean herby taste? If you use proper basil, the base taste is that of basil.
I haven't checked the actual recipe for pesto, but I'm guessing it's dialed down cacio e pepe with finely chopped basil.
Love pesto! I once made this pesto lasagna with tofu. It was so go but I lost the recipe. Homemade fresh pesto is a real treat! I also love pine nuts.
Love pesto pasta. The best dish is trofie al pesto from Liguria. It was sooo delicious in Italy.
