For me, I'm from the USA and my favorite condiment is Texas Style BBQ Sauce (it's a little more savory, smokey, and less sweet than the standard Kansas Style sauce)




France. If narrowing condiments to sauces, I don't buy any processed ones, the only pre-made sauce I buy is mustard, once in a while.
Instead, I'll end up improvising a tomato based sauce, mostly using available ingredients at the time I'm cooking something, could be garlic, onions, mushrooms, tomatoes, pepper bells, various herbs, various spices... I don't follow recipes at all, I'm going with what exists in the kitchen lol
For Spain, I'd say salsa brava. It's a spicy tomato sauce typically served with fried potatoes, the ones I think you call potato wedges. If you want to order, just ask for patatas bravas. You get the dish and the sauce in a separate bowl. Depending on where you order, you get mild to quite spicy sauce.
Wales here. Generally depends on what I'm eating but mayo, tartar sauce, and mustard are the ones I go for the most.

I hit most foods raw dog, I’m not a huge condiment guy. Barbecue sauce is usually solid though. Honorable mention to honey mustard. But I would probably take them like a shot rather than put them on food😂
