What French dishes are your favorite?

What French dishes are your favorite?
I am a fan of french "Five Mother Sauces" and Alsatian Flammkuchen, but generally french dishes differ just in name and small spice differences to similar dishes common in Europe. Maybe snails and other weird stuff is uncommon but most dishes appear in other European cuisines just under other names.
I’ll have to go with French onion soup. I see it all over the place where I live and get it often.
Canelé are pretty good :) We were on holiday and walked by a place that sold these and we'd never seen it before and then my mom had to make them herself. She did pretty well actually :) It's not easy to get them baked just right but everybody loved eating them when my mom made them :)

One of my favorite French dishes has to be coq au vin. The rich, velvety red wine sauce paired with tender, slow-cooked chicken captures the essence of French comfort food. French onion soup but that’s an appetizer I like most French food as long as it’s not seafood
Anything involving potatoes. They get the fat-salt-starch ratio perfect.
So hard to pick, I like most of the ones you listed. But probably my favorite French dish is confit de canard. Hard to beat.
