I gre up thinking well done was the only way to eat meat.

I have since learned cooking meat until well done not only makes it harder to chew and removes the taste, it also removes many of the nutrients in the meat.

Restaurants use steaks they're ready to throw out when a customer orders well-done. If you really must have it well-done, order it medium, then send it back to have it done a little more. At least you'll have a good cut of meat.

He says it at 2:30 but the whole clip is interesting. In his book Kitchen Confidential he says it outright, and also on an episode of No Reservations, but offhand I wouldn't know which one. He was in the kitchen at Les Halles when he said it and Eric Ripert was there also.

Medium rare. Those like their steak well done cannot be trusted. It is desecration of a delicacy, turning food into a dog's chew toy. A well done steak functions better as a shoe than as food. Meat needs to bleed.

The woman I love also likes hers well done. She once said that if she sees any pink or red in it she'll send it back. I started laughing she's a take charge don't put up with any crap type of woman
