So it starts with a nice medium ground lightly seasoned with a bit of taco seasoning,(we aren't having tacos here just enough to add a smokey bbq esq flavour without more moisture) and with minced onion and cracker crumbs that gets formed into a cheese stuffed in the center patty but more like a bowel with a lid then flame grilled till perfection stacked on a Calabrese bun toasted on the crust side only with a thick slice of beefsteak tomato on the bottom and a semi spicy slaw on the top... omm nom nom

I start with ground sirloin. I make them extra large, maybe 1/2 pound. I get bulkie rolls from the bakery. I preheat my grill and put the burgers on. I let them sit for 3 minutes per side. flipping it over only once. I fry up a few slices of bacon, get some fresh Iceburg lettuce. Salt and pepper only.
