If the restaurant exists to serve to the hotel residents then the food will typically cost about one-third more than the quality warrants. Basically cruise-ship swill.
There are quite a few serious restaurants that cohabit within hotels, though, and some of them are exceptional.
So the test is: is the majority of the restaurant clientele wandering in off the street, or spilling out of their hotel rooms?
Depends. The Four Seasons, the Park Plaza, the Waldorf Astoria, the Horned Dorset Primavera in PR, and The Phoenician in Phoenix all have excellent food.
It very much depends on the hotel and region.. Don't think you can generalise it like that but yeah higher star rating has higher chance of your food.
The only time I like hotel food is when I travel overseas. Otherwise, I usually don’t like it, or I won’t even try it if it looks unappetizing
Yea, sometimes certain things at certain places are edible but there's a reason I usually check to see what's nearby when booking

I don’t think hotel food is generally bad, but it’s often safe and predictable. Many hotels cook for large crowds, so flavors can be bland.
Some of my best breakfasts were at small family-run hotels in Italy, with fresh ricotta, tomatoes, and bread 🥖. Big chain hotels can surprise you too, especially in Japan with beautiful, simple breakfasts. It depends on the place and the chef.
