Why do girls apologize when their foot brushes against your leg?

This girl I really like was sitting next to me at lunch on a park bench thing. Anyway I noticed her body was facing my direction and she had her legs crossed and foot pointing towards me. Her foot brushed my leg and she said sorry. She also was sitting opposite me a couple of days before hand and once again her legs were crossed with her foot in my leg space. She tapped the leg that time as well but that one may have been accidental.
In class she was sitting one seat away from me, anyway the other person walked out of the classroom and she immediately stretches her leg out on the chair with her leg in my direction and starting moving her foot side to side everytime I look at her leg.
She suddenly has gone around me and doing all this body language stuff. I've accidentally caught her looking at me a few times and when I notice she looks away quickly. We make eye contact every time we walk past each other. When I message her she is fine.

She touched my leg again today with her foot for the 2nd time and said sorry, it was at the same table and seating positions. It was weird the she did exactly the same thing. This time I waited 5 mins or so and then I let my leg touch her foot and I said sorry. She didn't say anything but she didn't move her foot away. Mind you I already said to her "that's alright" but in a really nice way.
