Why can't I be myself around this guy who I really like, how do I fix this problem?

Fear of rejection. You're consciously or subconsciously afraid that "being yourself" might put the guy off. There's probably some aspect of yourself that you secretly dislike or feel is unattractive. Such a fear is probably enhanced by the fact you've liked the guy for a year and you don't want to mess it up.
but actually if you're not presenting yourself as you really are, you're not giving the guy the opportunity to make a proper decision over the whole of you and it doesn't bode well for the any future possibilities if you're going to suddenly turn into someone else at a later date when you feel more secure. Acting as a shy and quiet girl creates a lot of confusion for guys which is not going to help either.
The irony is in fear you're as much, if not more, creating seeds of failure than being yourself might do.
