And while all of this is happening, she can be very blunt and pretend to be like she doesn't really care much about the relationship and she'll just be there as long as everything is going well and she's having fun and not getting bored.

Well working out can be really boring. Huffing and puffing on a treadmill while going nowhere and other tedious things can really hamper motivation. When a man starts chasing you, it's unexpected and the fear that he may be out to rape, rob or murder you really kicks you into high gear. It's often a great anaerobic workout and the added adrenaline rush is a nice bonus!
It all comes down to the attention. That's what they love most. And women of today are more obsessed with getting attention than they ever have. And I don't mean to get spiritual here but it ties in with what the apostle Paul said in 2 Timothy 3:2 "for men will be lovers of themselves." This doesn't mean men the gender, but collectively men as humans, and women would fall into that category.

It's all about attention. Women tend to value attention over sex, while men tend to value sex over attention. We all have different ratios of what we value, but that's my general rule of thumb.
