How do you feel about rich kids who hold you to another standard?

I bought a horse from this girl and initially her dad bought him for her. She’s incredibly spoiled and didn’t pay for him. He was $15K. Anyway I’m self made and my parents don’t help me with finances. I paid for most of him in installments and had one payment remaining to which we pushed the deadline back and there was no contract agreement on it. She texted me demanding the money by 5pm and was being absolutely nasty about it. I told her I’d have it to her by a certain date and she was like “I don’t know if I even trust you to do that.” And she’s claiming she needs it because she has to pay her dad back. Which is a lie. She even started texting people I ride with to tell them I don’t pay for things. Which is a lie. I paid $13000 towards this horse of my own money while her dad paid for everything her entire time of owning him. She’s disgusting and can’t empathize with my situation and she’s out of line. And she’s a grown adult/ 32 yo. She really needs my money to pay her dad back? Please.
How do you deal with spoiled rich people who hold you to a different standard and lack empathy?

Did you get a legal contract stating you have until whatever date to pay the remainder of the money owing? Did you get any receipts to back up that you have paid the amount you have? The reason for why I am asking is because you don't know if she will take it to court.

Other option is to speak with her dad and let him know she is making false claims against you and maybe inform her that if she doesn't stop you will take her to court for defamation as technically this could come under defamation as she is making false allegations against you

Yeah I asked her if she wanted to rewrite a contract with terms on the last payment. It’s only $1300. And she said “no” before and that she just trusts that I’ll pay it. I have a text record of the date and time and amount we lastly decided on, so I guess that’s legal binding. She could take me to court but by the time she would I would have already paid it up entirely. She just said if it’s not by the certain date that there will be huge issues. But in my opinion she’s blowing this out of proportion. I find this disgusting now she’s treating the situation like I’m irresponsible…when she never paid for any shit before and her dad did.

The date seemed more tentative and she didn’t want to resign a new contract. We have an official agreed upon date two weeks from now so I don't know her deal tbh.
