I know that usually when a girl says “you’re so sweet” to a guy it means F off or that they’re not interested. But I don’t want this one person to think I’m interested in them when I’m not. I work at a store and this person that visits occasionally always speaks to me. We have great conversations, once she left with a lot of things and I offered to help take these items to her car. She told me “you’re so sweet. I think I got it but thank you” Because if she thinks i was hitting on her, the next time she’s in the store I’ll give her some space or will have short conversations with her. Maybe I’m overthinking it but just wanted an opinion. Bc she could’ve said “no thank you i got it!” but she called me sweet. I’m hoping i don’t reek off “nice guy syndrome”
I would say that her reaction is solely the one of a person that is grateful for the help you provided.
You did not have to help her with her own shopping but you took the time to assist her and that is why she told you that you are so sweet.
Furthermore, you don't mention the age of the woman. If she is in her forties or even older, then I hardly think that she believes that you are hitting on her.
Personally, if someone would go out of his/her way to help me, I would also thank that person and casually say that his/her help was appreciated. "You are so sweet" should not be placed in the context of an attempt to hit on someone but rather to be seen as a "thank you for your gesture".

She appreciates your generosity, thoughtfulness, and general kindness. I woukd be like, “I think we might be a good fit. Why don’t we spend couple months interacting and see where this goes…” ASK OUT now in this point of communication
I can't tell from that what she's thinking, but is she comfortable around you?
