Why would a girl turn her head back to look at me, then immediately look away when I look back?

This happened in our "break" room at work. I was leaning against the wall minding my own business, waiting for my stuff to finish heating up when I noticed her turn her head back/to the side and kind of over her shoulder. When I looked up/over and we locked eyes for a split second, she immediately turned her head away so fast that I thought her neck was going to break.

I don't think she was scouting the room as she very likely already saw everything once she walked in. It's just a fairly big and narrow rectangular room, doesn't even have chairs. From my POV it looked like her head/eyes started and stopped with me.

She had no facial expression on her face, but I do remember that her lips were slightly parted/ajar, which is what happens every time I see her around work. She never actually looks or makes eye contact with me from up close and only from a safe distance. However, I do sometimes notice that the corners of her lips/mouth twitch upwards ever so slightly. But it could be confirmation bias.

I've also noticed her looking over the sea of cubicles towards my area when she walks towards the bathrooms, that's actually how I first caught sight of her.

Another time, I was walking back to the office from lunch, my head was down, and I noticed a pair of shoes stopped on the sidewalk. I looked over and up and she was staring at me, the same expression on her face.

Is she interested or does she think I'm creepy? The only reason I'm asking is because in the past, I'm pretty sure I've also seen her hide behind a fence when she saw me too.
