As was stated above the term "chick" is probably a bad traduction of the spanish term "chica". term whose direct traduction is "girl". However it's not commonly used in all the kinds of Spanish languages ( but it's used in Mexico). Posibly the Spanish term was heard in the frontier with Mexico and then adopted. it's pretty much the same history as with the term "gringo" (those terms adoptions happens a lot between languages).

While 'chick' is a common slang (indeed, a mispronunciation of 'chica', as said earlier), it is politer than some terms that could be used (refer to other comments below). Depending on age, there are a number of terms that could be used, including 'young woman', 'lovely lady'... the list goes on, getting cheesier as it goes. Some guys can pull off different terms without them seeming 'strange', some can't. I can't call a girl 'hotstuff' without feeling a little odd - it's not my style. Conversely, I have mates who say it all the time, and suit it. Every guy has a different manner that suits him - so you can't expect all guys to use one defined 'set' of terms to refer to women. It's not possible.
