Why does he pretend like he doesn’t “remember” or “know” my age when he clearly does?

This guy asked for my number a few months ago at the gym, showed interest in me which I showed mutually too, he asked for my age in March and I told him I was 24 and he said he was 31. He started emphasizing how old he is showing how insecure he is but I always told him how he makes me wish I was 30 so that he stops emphasizing the age difference. Things went downhill for a while (he never asked me out but we’d walk out the gym together- we’re back to talking now). This guy keeps staring at me from far and is just really cautious around me till now. The other day after gym we were walking around and I was walking him to his house cause it was on my way to the smoothie shop I was going to... then I randomly mentioned how I’ve never taken a cab cause I never felt the need to (I take uber or metro) so he goes like how old are you? I said “you know how old I am, stop pretending” so he said “yea 24/25” I said “I’m turning 25 next month” so he said “yes you’ve never taken a cab in the past 25 years.. what did you do before uber”.

Why is he pretending like he doesn’t know my age? He clearly does... cause when he asked me for my birthday months ago he was like “let me see what famous person shares your birthday so that I can remember it”. this guy is super attentive and remember every single detail I ever shared with him.
