How do you know if a guy is a beta male or just a shy and sensitive guy?

All men who talks about categories of men like to think think they are alpha-male, when none of them, really is.
Alpha male is a term used to describe the behavior of some captive animals.

The persons who used the term "alpha male" generally use it to describe a person who is socially dominant. By that definition, the rich 92 years old guy who can't even stand up is an alpha man.

No such thing as Alpha beta gamma dudes.. it a system created by self proclaimed Alphas.. Who aren't really alphas because if an alpha was real, he would not have a need to tell anyone he was alpha.. Just ones with weak egos, and therefore not really alphas.

Alpha/beta males refer to "masculine/below average masculine males. Alpha/beta is somewhat misleading because the terms are used in pack animals, and while humans frequently split into "leader/follower" roles that's not really the same thing. If the guy has a low end T-count that's what beta refers to. Whether or not that's a good thing depends on whether or not you like your men to act like men.

I would say if he opens up to you about personal problems or issues easily he is beta, but if he is closed off shy but independent then he is not beta.

What is a Beta male? That doesn't apply to humans. That's a term you would use for wolves and a beta wolf isn't what people think.
