About 5 months ago me and my ex and I started dating again he told me he loved me and he was sorry about what happened before

Because he is looking for sex and nothing more. He is completely using you for that. He wants to act all sweet and get back in your good graces just to get in your pants. Once he has that, he ghosts you. When he wants it again, he is "so sorry and loves you".

Not hard to figure out. He is using you as a placeholder. He doesn't actually want to be with you. He just wants the sex when he can't get it elsewhere. Once that mission is complete, he doesn't want anything to do with you.

Cut him off and see how much he "loves" you. That or next time he tries that stunt, let him say all that and deny him the sex. See if that attitude changes.
