Guys, Do strait guys ever say "love you" via text to women?

Well I have a male friend and coworker that I consider a close work friend, but we don't hang out outside of work (though it has been brought up recently). In person he told me "I love you" first. I did a head tilt, and probably lifted an eyebrow. He followed with "I'm serious, I love you." with a strait face. I took it platonically and just said "I love you too" back. I do often feed this man cookies regularly, but I do this for everyone at work.

I showed my sister one of our texting conversation and saw me telling him to have a good night and him following with "you too. Love you." She thought the "love you" was weird. I again thought it was platonic and friendly, but she pointed out that she doesn't any strait men who would text this. Thinking about his personality type, I thought she had a point, I know people of very similar personality type who wouldn't even do this with their sister.

He's recently broken the touch barrier after knowing him for several years , and he's staring at me intensely. When he talks to me, he is touching me. So it caught me really off guard, and now I'm looking back and I feel like I missed some signs.
