For those of you who are vegans... can you eat as much as you want?

I often hear from people who are vegans that you can eat as much as you want and you won't put on weight. I follow a few vegans on YouTube and they are all very slim and claim to eat between 1800 calories to 2500 calories everyday ( mostly fruit, salad, and veggies) without putting on weight. And they don't do a lot of sport.
Is this possible? Other people say that its does not matter where the calories come from you will put on weight even if yo eat healthy food if you eat more than you burn. I have no idea what and who to believe anymore.
For those of you who are vegans... can you eat as much as you want?
