For a person who was probably consuming 4,000 or more calories a day to get to and maintain 350 lbs of weight, eating 1,200 calories a day is putting your body into starvation mode. 1) your body is going to hunker down and try to maintain the weight you have and 2) you won't be able to last for long doing this.
I am not a fan of drastic changes to lose weight. I believe in making small changes that you can maintain and that does not send your body into shock. Your stamina is also decreasing because your body is not getting enough calories to maintain your energy. I would up your calorie intake to 1,800 or 2,000 for now to get more energy and get your body to ease up on holding on to your weight. Just make sure that what you are eating is good for you. 2,000 calories a day of junk food will not give you the energy or the ability to keep losing weight. Make sure you are not eating fried foods or high fat foods. Instead, eat more fruits and vegetables and whole grains. Foods that have fiber will leave you feeling full longer and they are more satisfying. Do it for a while, and your taste buds will change up to craving fresh foods, instead of junk foods.
As far as exercise, change it up. Look at high intensity interval training. The workouts are short but intense and if you keep changing the type of exercises you do, you will create muscle confusion and the muscle growth that will stimulate will burn even more calories than the cardio you are doing. Remember, the more muscle you have, the more calories your body burns at rest or any other time during the day. I am a small woman and I know I can eat more calories than you would think because I have a lot of lean muscle.

Up your calories. You have to feed your body to be healthy, if you start at 1200 cals where are you going to go from there? If you eat less than 1200 you risk slowing your metabolism and your body won't be able to get the nutrients you need. If you don't know what you should be eating join a free weightloss site like www.myfitnesspal. Com. It helped me lose 117 pounds. Believe me you will be better off getting advice from people who have been obese and then gotten healthy.
you have gotten to the point where you just need to increase the calories a tiny bit and use heavier weights maybe 10 lb dumbells try 1500 calories a day and go for 1-2 mile walks jogging when you feel that you can instead of the bike
Basically, you need to do two things with your current routine;
1) vastly increase cardio workout time, the more you sweat the better.
2) cut out the "snacks" between meals. (assuming your meals are healthy)

Long story short, it's normal to hit a plateau. Keep up your motivation and hard work and the weight loss will follow.
1200 calories may be a bit too low though. You may want to speak with a doctor or nutritionist.Research High intensity interval training
