I keep finding mouse poop every morning?

It'll be ten pellets or so. All over the kitchen counter. I'm confused, I've grown up in houses with mice because I'd live in the country but there was never this much poop. (Also our cats are clearly useless) is this mice?

It could be rats. Even being 7 months old I'm sure at that age they would be curious and want to play with whatever is leaving the droppings. Unless this has been happening since they were born and they are just used to the mice or rats so they don't care

The were outdoor cats. We have had trouble with bats also but it's way too small to be rats.

They might just be used to them and don't care. Being outdoors cats they are probably aren't fazed

Not all of the time. My neighbour has outdoor cats never once seen them hunt for anything

Mice or rats the smell of cats should have kept them away unlucky I guess

They're still only 7 months old or so, do you think when they're older it should work better? The house next to us has also been vacant for almost a year although it's cleaned out.

Buy some plastic traps that snap shut and put a small dab of peanut butter on the plate in the trap. Set multiple traps.
