Is this a healthy diet and workout schedule and how can I improve it?

My workout schedule usually goes like this:

Monday-nothing, sometimes 20 min jogging

Tuesday-1 hour of horseback riding

Wednsday-1 hour and a half PE lesson

Thursday- 1 hour of ballroom dancing

Friday, Saturday and Sunday 20 min jogging

On a normal day I eat:

Breakfast- oatmeal or cereal with fruit and milk and orange juice

Lunch- Sandwich or pasta

Dinner- some kind of meat/fish with rice or potatoes and vegetables

I rarely have snacks but it's usually some kind of nuts, fruit or a small candy bar.

I eat between 1200 and 2500 calories per day I weigh something like 135lbs and I'm 5'8 1/2 I'd like to maintain that weight or maybe loose a bit so that I can fully enjoy myself on holidays

So is this good? can I improve anything?
