you may have some issues with eating enough at first-but don't get discouraged,just work on it. make sure you get you 5+ portions of fruit and veg a day,and I try to eat at least a handful of nuts/raisins a day. soy is a great addition for protein,there are so many different things you can do with it,so it won't get boring. I would say it's sustainable,i've been eating this way for the last 3-4 months (but I've been a vegetarian for years) and I feel great,i have more energy,i don't get dizzy anymore since I don't get stuffed with bad food so there's more room for the good stuff (no anemia),and my weight is stable (I did lose a couple kg,so I was worried,but it evened out with time) and if you do it right,you will get enough protein,my muscles are better than ever (abs of steel mothaf***a)
What about egg? You can still have that right?
Well iron from red meat should not be a problem if you're taking a lot of green leafy veg.
I suggest egg because it's one of the foods that are considered "whole" - as in it has so much good stuff in it that your body needs. Dw about cholesterol, eat them sensibly, maybe a bit in your salads.
Everything you need will be in your current diet. As for the quantity, you'll need to count up the calories to tell. There's nothing in red meat that won't be in what you're eating now, except for too much animal fat, hormones, etc.
Vitamins and mineral in processed food? LOL No, eating REAL food is WAY better for you.
Sounds like mostly vegetarian? That's what I do.
