The THREAT of harm is "assault". The criminal act of CAUSING the harm- whatever it may be and however it may be done- is the "battery". If you use a "weapon" of some sort - gun, kitchen knife, baseball bat, broken beer bottle, pot lid- whatever- etc., then the criminal charge would be "aggravated battery" along with the "assault".
The distinction of "bodily harm" vs "destruction of property", would be more relevant if there were to be a civil tort suit for damages following the incident. Disclaimer - I'm not a lawyer but this is how I remember it was explained in our Citizen's Police Academy classes.

If the prosthetic limb was worn/attached, that's definitely grounds for bodily harm among others. I suppose if the prosthetic limb was willfully damaged while being away from its owner, that might fall under destruction of property.
I think it would be a form of felony assault if anything. And since a knife is used, probably an additional armed criminal action charge if that charge exist in your state (it varies depending on what state it occurred).

Depends if the prosthetic was on or not.
If the stabbing person was aware of it is a prosthetic. why that person did stab.
That means also what the stabbed person did do to get stabbed.

What judge, prosecutor, lawyer, jury and so on how it is seen as.Both. The intention behind stabbing someone in their prosthetic leg supports the idea of inquiring someone, physically. On the same note, a prosthetic (just like any other limb) is personal property, expensive property.

Still it would be an assault as it is attached to the body of the individual and stabbing it indicates an attempt to restrict the movement of individual.My guess is it would depend on if you in any way inhibit the usability of the prosthetic. Oh and whether or not you knew you were stabbing a prosthetic of course. :)

1- bodily harm because you attempt to stab him (regardless you know that he has prosthetic or not), I do not think they will consider your intention, exactly if you shoot someone and later you discovered he put on a bulletproof vest, it is classified as attempted murder.
2- the destruction of property because it is already damaged and must be compensated.Destruction of property with intent of bodily harm i think not to mention assault on a disabled person can be added at least in California but probably other states.
If a woman did it, then self defense. If a man did it then it is felonious assault.
The follow up question would be should it be punished the same as actually stabbing someone in their leg?

It’s aggravated assault or assault with a deadly weapon. The prosthesis doesn’t factor into it.
