Florida counts absentee ballots as they come in, before election day. They're not allowed to publish the ongoing count, but they don't "count all their votes in a day". Bet you a dollar that you never admit you were wrong about that.
Arizona's results come out later because of Arizona law.

Why don't you love mail-in voting any more? Florida Republicans loved it for two decades, now it's suddenly terrible.
While I think the whole idea of having someone oversee their own election is a bad one, it seems to be common, and since you had no objection to Kemp running his election for Governor of Florida (during which time he took steps of dubious legality to improve his chances), you don't really have a leg to stand on, do you? Double or quits: you won't come up with a single thing Hobbs did that could sway the gubernatorial election (other than demonstrating competence).

I am going to rag on you a bit because you are "30-35".
As a legal adult for almost 1/2 of your life, you should be full aware of the concept of "due diligence" which, in simple terms, means being responsible for doing your research about a topic to make an informed decision.
So, instead of asking us (*), you should do your "due diligence" and find out the answer yourself. Furthermore, as part of that, ask yourself if the question is even legitimate: Are the numbers you provided in your question accurate?
(*) To me, I view this question in multiple possible ways:
1. You are trolling (hence, "Anonymous" yet there is no legitimate reason to ask this question anonymously since it has no personal information).
2. You are easily manipulated because you just echo "authorities" who, themselves, may be propagandists or trollers.
3. You are an idiot or intellectually lazy.
I have a feeling it is some combination of all 3.
To give you an example of due diligence, let's do some for one state: Arizona.
In every state, it is the Department of the State that deals with elections and it is the Secretary of State who ultimately certifies election results. (Certification is the critical word too because that is when the results of an election become final.)

Arizona and Nevada are states that are not allowed to count votes until the polls close on election night. Where as Florida’s can start counting mail in ballots when they start arriving to the election board from the citizens.
Also in Arizona each mail in ballot has to be checked and the signature has to be compared to the signature on the ballot rolls for the state. Then it is sent off for verification by a bipartisan council. And that is done by hand not computerized. I Maricopa County, prior to Covid there were less than 100,000 mail in ballots. For these past mid terms there were 290,000 mail in ballots. That’s just one county?
Though I don’t particularly believe it should be taking this long, I am slightly biased. Florida is a Republican state and the democrats are in Arizona and Nevada. All the states that are taking their time counting ballots are all democratically run states.
Because:
Florida: All motherfuckers practically live in one big trailer park
Nevada: Motherfuckers have to fight a day in the desert to get to and from civilisation.
Arizona: Motherfuckers navigate by stars and communicate by smoke signals from the mountain tops.
More seriously. Mail in ballots are why there is a delay. Republicans have yet to figure out how stamps work.
Lmfao! But seriously, most people in Nevada live in one of two compact urban areas. Like, over 90% of the population. The people living way out in the desert probably number less than 5,000 in total.
Rules that allow votes that are postmarked by election day to count. Florida, on the other had, has "Once your vote-by-mail ballot is voted, return it by fax or mail to your Supervisor of Elections so that it is received no later than 7:00 pm on Election Day."
Because they have laws that say it should. Simples.
Your signature on you ballot envelope is missing or doesn't match the one on file? Your vote won't be discarded, we'll let you verify it really was your ballot, then count it.

It's even stranger than that: even BRAZIL, a country nearly as large (both in area and population) as the US, has same-day election results. They're also WAY less developed, infrastructure-wise.
The answer to that is easily found by - looking it up! Of course, if you ask a Republican, they'll tell you it's because the Dems need extra time to make up fake ballots once they've counted the vote and realize they lost. LOL
