Medium?
Rare?
and is there a special recipe? I am asking because I just tried the British method in preparing it -which involves a lot of butter- and really liked the extra juicy feature.
:-*
Okay, this subject is dear to my heart- dear, but not near, as I am now a vegetarian :D
I have included my favorite cooking recipe.
As a child, I ate steak and hamburgers ravenously. Every time we ate at a restaurant, we had to assure the staff that my mother was allowing me to eat meat RARE because the chances of sickness are higher and they're not supposed to feed children rare red meat but, it was the only way I liked it- if they refused, I'd either pick out the tender, bloody bits or not et the meat at all because the chef restaurant might often have a policy of overcooking the meat to avoid possible sickness or even complaints, which I never understood. There was one restaurant that became our regular place, where the chef came out to meet us to be sure that I really knew what rare meat was and that Mum was okay with my eating it and whenever we went to eat there, he knew my order because I would order fries instead of the adult side, which was something like stewed onions, I think...And I'd usually order a chocolate milk ( they'd just mix syrup in a milk for me)
Yes, I was a bit spoiled gastronomically.
My mother is a wonderful cook and we were friends with a chef who would also serve me rare meat, even carpaccio and alcohol-soaked chocolate desserts!
At the age of 13, I became a vegetarian *haha* and even tried to be vegan for about 3 years until anemia and dry skin convinced me that I at least needed dairy and eggs.
I am still vegetarian but have been told I am a good cook.
Julia child and Lydia Bastianich have some good steak recipes and hints for good cooking. Also, my mother and I became briefly addicted to Cook's magazine and their related tele-show 'America's Test Kitchen".
My favorite steak is :
a) rinse, put in metal bow of lightly salted water
b) chop carrots and anise root into chunks
c)veggies in oiled pan to lightly brown and become translucent
d)when veggies begin to smell, crack 5 black pepper corns and add
e)when you can smell the pepper, after about one min, rub the steak with oil, sprinkle with your favorite dry herb and nestle the steak in amongst the veggies, break up a small sprig of rosemary and spear it into the steak in about three places. Drizzle all your ingredients with a little more oil
f)watch the steak, I usually count to 40 and check the bottom to see if it's browned. When it has, flip it over, count to 15, see if it's browned on the bottom, drizzle with either red wine or whiskey or sherry and add some more stock ( I actually really like oyster stock with steak) as much to barely touch the top but not cover the steak. Cover with a lid and set your timer for 5 minutes
g) after 5 minutes, press but do not stick with a cooking utensil. Cook for about three minute intervals to check If just a little liquid comes out, move it off the heat and let SIT for 5 minutes to RETAIN juices and finish cooking by it's own internal heat
h) add some fresh shredded parsley
side:French carrots/seasoned spinach/rosemary potatoes
Wow...definitely I am gonna try that...ding ding ding, and the winner of best answer is...Fitzroyyyyyyyyyyyyyyyyyyyyyyyyy :D
haha Yay!
I almost want to make it again..I used to make it for Mum but I haven't seen her in months :(
spinach: 1.fresh spinach, stems removed, sit in ice water 2.in HOT pan:plain butter, thyme, tarragon and sliced shallott and mushrooms, sprinkle of salt, cook til translucent but still firm3.sit spinach on top, drizzle with same steak alcohol, cover, count to 40,move from heat.4.prepare plate, add spinach, add another sprinkle of salt and herbs & oil ,squeeze with half an orange. Enjoy! :P
I like mine anywhere from medium - well done; I really just can't eat rare, ever. And your side dish sounds awesome, but I'm going with roasted herbed potatoes as a side.
nice! *thumbs up*
I'm not a steak man per se, but if I have any meat, it will be well-done to the point of crispy with plenty of ground pepper on top.
nice *thumbs up*
Well-done, not too keen on blood in my food. I can smell the steak already!

poke it? uh sorry, its just the meat we have here is prepared according to the Islamic traditions...which insures that the meat is clean from any blood...maybe that is why we never worry about the blood being in the meat.
