Can I get some professional help with a meal plan?

So, I've been into Japanese culture lately, and I love Japanese food. I've also been having a lot of gut problems lately, and they have a lot to do with my diet. I recently learned that Japanese food is extremely healthy. I was also intrigued by the way that Japanese food is prepared. There are smaller servings of many kinds of food, and each food is cooked differently. (this link explains it better than me...)

So, what I'm getting at is, I'm considering going all Japanese for a week. I want to eat nothing but Japanese food in the traditional Japanese style, and I want to see how it affects me in the end. The only problem is, I'm not familiar enough with Japanese cuisine to come up with a week's worth of meals... including the afternoon tea. I will probably only have sushi one day of the week, (although I'd be content with every day :) ) since the Japanese only really eat sushi on special occasions. What else should I make? I'd like answers from anyone Japanese or who knows things about Japanese food, as well as people who study nutrition, and may know what foods are healthiest.

Requirements: for religious reasons, I cannot eat shellfish, octopus/squid, and any other kind of sea life that does not have both fins and scales. (I mostly stick with Salmon and Tuna for sushi, although there are other types of fish I can eat.)
