How often would actually people just make an excuse when breaking up with someone? Is this an often practice so they can save the feelings of the other? Or is it just because it’s convenient? What’s your opinion? Would be honest with your partner or romantic interest about the reasons you’re ending your romantic relationship?

It would depend why we're breaking up. It's unfortunate. But sometimes it's war with the opposite gender and you have to treat it as such. You don't give your opponent your battle plans. And sometimes you have to show no quarter.
