I would never give up my eating habits for a relationship. If he loves you, he should accept you the way you are.

Yes I would. You should not have to change your everyday life to be able to be with somebody. If it's his religion that says he can't eat meat he needs to understand that your religion says nothing about that.
My girlfriend has gone veggie. At home I join her, and when we go out I join her on veggie meals, but now and then I eat meat. My girlfriend is ok with it. If you have to change, then are you happy? Flexitarian. Not a boundary.

I don't think you should change yourself in a way that will be hard on you and won't really be for your own good just because someone else wants you to. Your boyfriend is selfish.
Personally the way I see it. Neither partner should have to change for either one. A successful relationship, starting off, should be accepting of each other for who they are. The same way you accept him for being vegan he should accept you for not.

It was not an ultimatum, but I did choose to go vegetarian for my husband for about 15 years. It was easier than I thought it would be.

No I would not give up meat for my Vegan other. We wouldn’t force anything on each other. We had that happen to us. Believe it or not, she broke and eats meat now. She was so bored with it.
