Should I ask her out again?

I asked out one of my college classmates last semester to have coffee with me. Her response was, "As much as I love Starbucks and appreciate the friendly gesture, I can't go on Monday since I help my dad at work after class." So, since she didn't propose another time, I didn't ask again. Here's the complicating factor: During my first class back this semester, she chose to sit down right next to me.

So I have the first rejection and the phrase "friendly gesture", but on the other hand, if she were completely uninterested, would she sit next to me if she could avoid it? I suppose there's also the possibility that her opinion of me has changed since that first rejection since it happened months ago.

Difficult to interpret these conflicting signals. She's a very sweet girl but very reserved/shy, and that makes it even harder to know what she's thinking. Being so quiet, she also doesn't strike me as the type of person to make the first move, whether she likes someone or not. What do you think?
