The ostensible reason it's done is allow transsexual folks to be referred to in the way they wish to without having to constantly repeat themselves- fair enough. But given that they up only a fraction of a percent, it's pretty damned obvious that's not the real reason.
Most people would say that the REAL reason is to signal loyalty to said people; after all, if they want to pass and not be considered noteworthy, to be "just another wo/man", then everyone should do it. But it's more insidious than that.
Why, then, is it done? This:

It's not legal to discriminate on the basis of race or sex- it's not even legal to ASK an applicant those questions under most circumstances. This pronoun nonsense is an attempt to normalize the idea of declaring what you are, which serves no purpose but to enable to discrimination that would otherwise be illegal.
As someone who's both quite liberal in himself and the great-grandson of immigrants who dealt directly with "No Irish Need Apply", I find it socially and morally abhorrent.
Don't make a difference except for when they get annoyed if you ask are they trans.
People put their gender pronouns but do not mention their sex so then it's a fair question to ask, but they get annoyed at you for asking which ironically is them making out that been trans is a bad thing.
Just showing they aren't as progressive as they like to think they are.
