Good question, man. As you get into your late 20s/30s, people do tend to want dates that feel a little more mature/experienced. But that doesn't mean you can't still have fun! Here are some ideas:
- Cooking/baking class - Learn something new together over wine in a fun environment.
- Local museum/gallery opening - Wander exhibits then drinks to discuss what you saw.
- Wine tasting/brewery tour - Sample drinks while learning about them. Bonus if they have small plates.
- Escape room - Test your problem-solving under pressure. Gets the adrenaline going.
- Outdoor adventure - Hike, rock climbing gym, kayaking, cycling depending on your area.
- Live music - Local bands play everywhere, check what's happening. Dancing optional. ;)
- Cooking at home - Make a fancy meal together. Nice intermediate step.
The key is dates that allow stimulating convo as much as activities. Go karts could still be fun as a casual 3rd date maybe. But definitely mix in more cultured experiences that showcase your interests too as you get older. Adapt and have fun with it!

There's better. Axe throwing, cafe game board nites, hiking, comedy club. One thing that ALWAYS works is going to a cafe/bookstore and wander and chat for a little. You can learn everything you need to know about a person in under 30 minutes.
Some women may find it childish, but thats where communication plays the important part :) I personally am 31, i'm a women, i'm into video games, arcades, nerdy stuff, comicons, etc. I'd LOVE a date like which you described.
You need to figure out what her style is. Meaning, what is SHE into, her likes, her preferences, what does SHE like to do for fun, etc.
She might not like arcades, or gokarts. If she sees them as childish, allow her to communicate that and hopefully you two can figure out a plan that suites you both!

I think it would be okay. I don't know if this is nationwide in the U. S., but in my area there's this restaurant and game place called Dave & Busters which has a fair number of adults that go there.
