This phrase is more about semantics/terminology, than literally claiming that the laws of physics change just because of an observer. (Or lack thereof)

Now, obviously, yes - The tree still produces sound waves when it hits the ground. That's not what's being discussed.
What we're talking about, is that 'sound' is a term specifically referring to our senses. 'Sound' is what we hear, not... the physical phenomenon itself - without an ear to hear sound, there isn't any.

That's silly. Of course it makes sound, and just because you would be in Madagascar and didn't hear it doesn't mean anything because those in Italy heard it.
The old "if a tree falls in the woods" story? Well, sound is caused by vibrations in the atmosphere that resonate inside your ear. Just because there are no ears to interpret the vibrations does not change the fact that the vibrations still exist.
So yes the tree does make a sound if nobody is there to hear it.
