I think it's important to fixate on QUALITY of your nutrition and physical activity and NOT obsess over calories, while practicing mindful eating.
It all depends how much time, money and effort you can put in. But here are my 3 options and you can use tidbits from each:
1) There's no shortcut to great health, only to alright-health. Overwhelmingly, people who exercise well outperform people who "diet" or "count calories" but live motionless lives. If you exercise a lot, you don't have to suffer on food. Focus on getting a healthy exercise routine where you're building strength, stability and cardio. Just do it. When you work out/ exercise 3-5x per week, there's no way you're staying overweight unless you sabotage yourself on purpose every day. Period. If you can commit to exercising that much, you don't really have to worry about calorie counting. Just pay attention to buying higher quality and nutritious food ONLY (brown rice, plenty of fruit and vegetables, leaner meats, and have a treat sometimes but not like every day, etc.) and only eat until you're full.
2) The less you exercise, the more you're gonna have to suffer on food. Cut out all processed sugar and flower products so that you are left mostly with just fruits and vegetables. Boom, my parents lost like 25lbs each in 3 months and hit their ideal weight just from that.
3) If you can't bring yourself to exercise OR cut out processed sugar and flower, at the very least get those obvious quick-wins. Basically all commercially available soft drinks and juices (even fruit juices)... Cut them out, and limit alcohol, expecially beers and the like. They're the worst on processed sugar (alcohol is also sugar, technically). If you drink juice it's because you put the fruit in the juicer yourself. That change alone is worth like 5-10lbs or more in a year. Try to limit things like milk as well. At the very least stop eating at fast food restaurants except on very rare occasions and cut out the obvious shit like Twinkies. Start making your meals at home as much as possible. It's cheaper and better for your soul too.

I think at least carb sources high in fiber like brown rice over white rice are better. I think as long as you can -- with reasonable consistency -- reduce your overall caloric intake without suffering macro/micro deficiencies, your body should gradually come to reflect those sustainable improvements in lifestyle over time.
The benefit of high-fiber carb sources to my understanding is that they tend to be more nutrient-dense (more vitamins and minerals) and our bodies absorb them more slowly, avoiding insulin spikes of a sort that can degrade our insulin sensitivity.
Sushi tends to be extremely calorie-dense though even with brown rice. I like to go heavy on the sides like miso soup and salad and favor mostly sashimi and just have a few plates of nigiri/rolls. I think sashimi is pretty guilt-free. Hard to go overload on calories with those.
I think I can answer this cause I used to eat sushi every day, don’t do it! It tastes incredible but is super fattening, salmon is one of the fattest meats out there, it has omega 3 which is good for your heart but so does sardines which had fewer calories or vegetarian sources of omega 3 like crushed flaxseed, I know you work hard to lose weight and poke bowls will reverse mostly all your hard work, a nutritionist told me if you want to lose weight, try to avoid eating rice and meat in the same meal and if you have to mix the two, limit severely one or the other so 90% rice and 10% meat or 90% meat and and 10% rice etc… A 50% to 50% ratio in one meal will make you obese, the other thing is brown rice has a lot of calories so you should limit how much brown rice you eat, if you want protein, try combining whey protein with plant protein or eating a high quality yogurt. Some low calorie cheeses are also high in protein.

Yes, brown rice is better than white. Just like whole-wheat bread is better than white. And sweet potatoes are far better than whites. As a matter of fact, if you eliminate anything white from your diet, with the possible exception of sperm, even from a white guy, you'll be far better off with your diet.
