    • Peel potatoes, enough to fill a large pot 3/4 full.
    • Chop peeled potatoes into 6-8 chunks
    • Boil potatoes.
    • When potatoes break easily with a fork, they are done.
    • Drain all water.
    • Chop a stick of butter into 8-10 chunks and add to potatoes.
    • Use a potato masher to break all potatoes into small pieces.
    • Add canned evaporated milk (do NOT confuse with condensed milk, which is sweet) and blend with electric hand mixer on low speed, gradually adding milk and increasing mixer speed until potatoes are smooth but not runny.
    • Add salt and pepper to taste.
    • Slice up half a stick of butter and gently mix into potatoes by hand.

It's unlikely that you will ever find better mashed potatoes. The mixer on high will whip air into the potatoes and make them airy and smooth. Gravy makes them even better, and turkey gravy makes them spectacular.

Might I draw your attention to the fact that you've neglected to advise what the best variety of potatoes to use. πŸ€”

I findvifvyou use an electric blender it works tondevelop the starch and makes the mashed potatoes very sticky especially if using russet potatoes as they're very high in starch content.

@EmmaMary I normally use regular old Russett potatoes, the ones in the 5 or 10 pound bags at the grocery store, but I have also used both red and golden potatoes at times, and while there is some difference, they were always good.

The butter and the heavier evaporated milk really helps make them smooth and creamy, and the whipping makes them fluffy.

Try them and I'm sure you will be pleased.

Help them off with their jackets.
Give them a nice hot bath in boiling salt water for about 20:00.
Stab one with a fork, if the fork goes in easily,. they're done and you dump the water out of the pot and toss in about half a stick of butter and put the lid back on to let the heat from them melt the butter.
After a few minutes, take the lid off and mash them fairly well. Then, pour a bit of milk into the pot and mash them some more and then use the masher to stir (whip) them around. If they're still pretty thick, add a little milk and mash them some more.

Well - that 'yummy-yumny' is a link but in the event it doesn't work, here we go...

      Ingredients:
Potatoes - russet or Yukon gold
      Butter
      Cream cheese
      Garlic salt
      Half and half
      Black Pepper
      Seasoned salt
      Chives - fresh or frozen

      1. Peel and cut potatoes
      2. Boil until fork tender
      3. Drain then return potatoes to pot
      4. Mash over low heat
      5. Turn heat off, Add butter, cream cheese, and half and half until you're happy with the consistency
      6. Add garlic salt, black pepper, seasoned salt and whip
      7. Spoon into casserole dish and add slices of butter and Chives to top.
      8. Bake at 350 until heated through

      ^^picture perfect every time πŸ™‚

My favorite is a classic buttery, creamy mashed potato, but it's great with a sprinkle of grated parmesan and finely chopped chives. And a sprinkle of crispy bacon bits, and I'm in for a treat!

I steam the potatoes using the Yukon Gold variety and use a potato ricer for light fluffy mashed potatoes and carefully fold in butter and heavy cream so I don't compact them.
