I like them with butter, sour cream, cheddar cheese, and cream cheese
- Peel potatoes, enough to fill a large pot 3/4 full.
- Chop peeled potatoes into 6-8 chunks
- Boil potatoes.
- When potatoes break easily with a fork, they are done.
- Drain all water.
- Chop a stick of butter into 8-10 chunks and add to potatoes.
- Use a potato masher to break all potatoes into small pieces.
- Add canned evaporated milk (do NOT confuse with condensed milk, which is sweet) and blend with electric hand mixer on low speed, gradually adding milk and increasing mixer speed until potatoes are smooth but not runny.
- Add salt and pepper to taste.
- Slice up half a stick of butter and gently mix into potatoes by hand.
It's unlikely that you will ever find better mashed potatoes. The mixer on high will whip air into the potatoes and make them airy and smooth. Gravy makes them even better, and turkey gravy makes them spectacular.

Help them off with their jackets.
Give them a nice hot bath in boiling salt water for about 20:00.
Stab one with a fork, if the fork goes in easily,. they're done and you dump the water out of the pot and toss in about half a stick of butter and put the lid back on to let the heat from them melt the butter.
After a few minutes, take the lid off and mash them fairly well. Then, pour a bit of milk into the pot and mash them some more and then use the masher to stir (whip) them around. If they're still pretty thick, add a little milk and mash them some more.
Half and half some butter, salt and pepper. I always use yukon gold potatoes.

I steam the potatoes using the Yukon Gold variety and use a potato ricer for light fluffy mashed potatoes and carefully fold in butter and heavy cream so I don't compact them.
